Tofu Wonton Soup

Ingredients

  • 5 oz. tofu, drained and mashed
  • 2 eggs, beaten (1 in wonton mixture, 1 to seal wonton wrappers)
  • ¼ cup onion, finely diced
  • ¼ cup carrots, finely diced
  • ½ package of frozen spinach (6oz) drained
  • ½ tsp white pepper
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • ½ tbsp cornstarch
  • ½ tsp salt
  • 1 package of wonton wrappers
  • 8 cups vegetable stock or chicken stock
  • 1 tbsp soy sauce
  • 5 cups water
  • 4 scallions (garnish)

Directions

  1. In a small bowl, combine tofu, egg, vegetables, salt, pepper, sesame oil, soy sauce, and cornstarch. Mix well.
  2. Place 1 ½ tsp of tofu mixture in the center of each wonton wrapper.
  3. Wet the edges of the wrapper and fold it, corner to corner. Pinch the three corners together so that the filled wonton resembles a triangle. Bring bottom two corners together and dab with egg and press firmly.
  4. In a large pot, bring vegetable stock and 1tbsp soy sauce to a boil.
  5. In a separate pot, bring water to a boil. Drop wontons slowly, cook uncovered 3-5 minutes.
  6. Remove wontons and put in a bowl. Ladle vegetable stock into bowl. Garnish with scallions.
  7. Serve immediately, enjoy.
